Well, I discovered this last week, almost by accident and I was able to reacreate it to happening in another campaign, so I think this is "normal"
As you may know, when it is winter, there are 16 days without rabbits to catch (or the racoons or the Shogun scenario). If you are in later days or islands it can be a struggle and, boring.
If you managed to reach island 5 and unlock the unicorn with gems and then normal coins, you know that eating grass produces 3 coins each time that happens.
Well, the thing is that by a design reason, when game is loaded the lands are loaded "normal" and WITH GRASS. That means, you are able to eat it with your unicorn, at least for the day when it is gone and covered with snow.
I was able to eat 5 up to 6 times each winter day that way, getting between 15 and 18 coins for each day. The catch is you have to quit the game to the dashboard / home, then load it back to the day save state, so the grass can appear again.
This you can do it for all the 16 days of winter, so basically you will gather between 240 and 288 pieces of gold, when you are suppose to get nothing.
This is working with the last hotfix patch #2 from Feb 11, 2019. So take advantage of it while it works.
I tested on the normal scenario and the Shogun, and it works on both.
Good luck!
